Roger Campbell -- Food & Beverage Manager
Chris Olsen -- Executive Chef
Chef Chris Olsen was born and raised in Sioux City, Iowa, and spent his summers with his grandparents on their rural Nebraska farm. Raised with an appreciation for the Midwest’s staple “meat and potatoes” cuisine, he sought not only an expansion of his food knowledge but also a deepening of his palate when he moved to Albuquerque in 2003.
Since then, Chef Chris has worked at some of the very best eateries in the city. He joined the Prairie Star team in March 2013, bringing with him fourteen years of culinary experience. It is Chris’s strongly held belief that food is an art that, when properly done, should engage all of the human senses. This belief is reflected in all of his dishes, from appetizer to dessert.
When he is not planning his next epicurean masterpiece, Chef Chris can be found with his young son, teaching him an appreciation of old cartoons, the skill of hockey, and the art of truly great food.

Rebecca Chaney is a native to New Mexico, born in Los Alamos, she was raised here in Albuquerque. A Cum Laude graduate from the Albuquerque Academy with a Bachelor degree in Biochemistry from the University of New Mexico as a Presidential Scholar, her first love, ironically, has always been the wedding industry.
In 1992 she opened her own bridal shop, Planned to Perfection Inc. A full service boutique where she also coordinated couples special days. She then had the opportunity to work as the Sales/Catering Director for La Posada de Albuquerque before coming to the Prairie Star Restaurant in 2005.
As a past member of Executive Women International, National Association of Women Business Owners, the Better Business Bureau and President of New Mexico Wedding Professionals, Rebecca has had the opportunity to work with most of the wedding industry leaders in the city.
When she gets a moment away from work, she loves to spend time with her Champion St. Bernards in her home of 23 years in Corrales.
Kathy Morrow, Human Resources
Kathy Morrow joined Santa Ana Golf in 2009, first working in the Pro Shop, moving into the Accounting Department in 2012, and becoming the Human Resource Manager in 2015. Kathy has lived in Albuquerque since 1983, coming from Joplin, MO. She has played golf since the age of 8, starting in a free Parks & Recreation program, sponsored by the City of Joplin. Swimming lessons were too costly, so golf it was! She has maintained her love of golf over her lifetime.
Kathy brings an extensive management background to Santa Ana, having managed people & programs throughout her career, most recently in healthcare. The last 10 years, Kathy has spent time doing the things she has always wanted, obtaining a BA in Interior Design in 2006, after many years of dabbling in the decorating field, as well as becoming more involved in ladies golf, allowing her to surround herself with the game she loves. Kathy keeps herself busy in her spare time volunteering, chairing the Albuquerque Women’s Golf Championship, and any and all arts & crafts.
Kathy plans to spend the last years of her career at Santa Ana Golf Club working with employees to continue to make it a great place to work, play, and dine for all who walk through the doors.
